Rosemary-Rubbed Pork Chops

  • 2 tbsp brown sugar
  • 1 tbsp chopped rosemary
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • Two 3/4 lb. pork loin chops
  • 2 tsp olive oil


  1. To make the rosemary rub, combine brown sugar, rosemary, salt, and pepper in a small bowl. Generously rub the mixture on the chops. Let the spices penetrate the meat for a few minutes prior to cooking
  2. Warm a grill pan or skillet over medium-high heat. Add olive oil to the hot pan and swirl to coat it
  3. Place pork chops in the pan, cooking for six minutes on each side
  4. Use a meat thermometer to check for doneness, which is when the thermometer reads at least 145 degrees
  5. Plate the pork chops and spoon pan juices over the top. Let rest a few minutes before serving
