Hatch Picadillo

Ingredients

  • 1 tbsp olive oil
  • 2 lbs ground beef
  • 1 onion finely diced
  • 3 cloves garlic minced
  • 1 lb mushrooms small diced
  • 1 lb tomatoes small diced
  • 1 8 oz can tomato sauce
  • 2 red bell pepper seeded and small diced
  • 1 Hatch chile peppers small diced
  • 1 cup raisins
  • 3 tbsp vinegar
  • 1 tsp Salt
  • 1 tsp honey
  • 1 tbsp ground chili powder
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1 cup pecans toasted, chopped
  • 2 tbsp cilantro finely chopped

Instructions

  1. Sauté the beef and onions in oil until onions are soft and beef is browned.
  2. Add garlic, mushrooms, tomatoes, tomato sauce, red bell peppers, Hatch chile pepper, raisins, and vinegar. Stir well and simmer for 15 minutes.
  3. Add salt, honey, and spices. Simmer for an additional 15-30 minutes.
  4. Add pecans and serve warm. Garnish with cilantro.
