- 1/2 tbsp olive oil
- 3 cloves garlic minced
- 1 onion finely chopped
- 1 Hatch chile seeded and minced
- 1/3 cup water
- 1 bay leaf
- 3 tomatoes coarsely chopped
- 5 green Spanish olives chopped
- Salt and pepper to taste
- Heat olive oil in a sauce pan and saute garlic, onion, and chile until translucent.
- Add water, bay leaf, tomatoes, and olives and simmer over low heat for 15 minutes, stirring occasionally. Season with salt and pepper to taste.
