Hatch Chile Veracruz Sauce

  • 1/2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 onion finely chopped
  • 1 Hatch chile seeded and minced
  • 1/3 cup water
  • 1 bay leaf
  • 3 tomatoes coarsely chopped
  • 5 green Spanish olives chopped
  • Salt and pepper to taste


  1. Heat olive oil in a sauce pan and saute garlic, onion, and chile until translucent.
  2. Add water, bay leaf, tomatoes, and olives and simmer over low heat for 15 minutes, stirring occasionally. Season with salt and pepper to taste.
