Greek Cucumber Salad

  • 2 each cucumber seeded and diced
  • 4 each medium tomatoes seeded and chopped
  • .5 cup red onion diced
  • .5 cup marinated artichoke hearts Roughly Chopped
  • 6 oz feta cheese Crumbled
  • 1 bunch fresh dill Chopped
  • 1/3 Cup garlic infused olive oil
  • 2/3 Cup red wine vinegar
  • Salt and pepper to taste


  1. Toss all ingredients in a large mixing bowl and allow to sit for at least thirty minutes before serving. Served chilled.
