Place spareribs into large pot and fill with just enough water to cover. Add soy sauce, garlic, dried herbs, lime juice, and 3/4 of the parsley. Bring to a boil, then simmer uncovered over medium heat until water has completely evaporated, about 25 minutes.
When all water is gone, remove bay leave and allow meat to brown, turning on all sides.
Remove meat and drain on a paper towels. Season with pepper and garnish with lime wedge and remaining parsley.
