- 2 each mangoes 1/4 inch diced
- 3 tablespoon fresh lime juice or 3-5 small limes cut into segments and chopped
- 1 cucumber 1/4 inch diced
- 1 red bell pepper 1/4 inch diced
- 2 fresh jalapenos seeded and minced
- 6 sprigs of fresh cilantro finely chopped
- 1/2 cup chives snipped
- 1 each medium red onion 1/4 inch diced
- Mix all ingredients.
Serve with chicken or fish. Excellent with chips.
