Greek Roast Lamb


  • 1 4- pound leg of lamb
  • 5 garlic cloves slivered
  • 3 sprigs fresh rosemary chopped
  • Juice of ½ lemon
  • Salt and pepper


  1. Preheat oven to 425 degrees.
  2. Using a sharp knife, carefully cut slits all over the leg of lamb. Put a sliver of garlic in each slit. Place lamb in baking dish and sprinkle with the rosemary, lemon juice, and salt and pepper.
  3. Roast for 30 minutes or until lamb is browned.
  4. Decrease temperature to 275 degrees, cover the lamb, and cook for 3 more hours, or until lamb is tender.
  5. Let stand 10-30 minutes before slicing.
  6. Use cooking juices as a gravy and garnish with fresh rosemary.
