. The fruit was handpicked in mid-September during the cool night-time temperatures. Upon harvest, the fruit was gently pressed and the juice was cold settled, racked, and then cold fermented in stainless steel tanks with a selected yeast strain to complement the expressive varietal fruit. The wine was further cold aged sur lie in small stainless steel tanks until bottling to enhance mouthfeel and preserve freshness.
