Smoked Rainbow trout PBO fillets place two Martini glasses into refrigerator and chill. Remove skin from Trout fillets and break into small bite size pieces with hands. Fold whipped cream cheese into container of creme fraiche. Peel and core Granny Smith Apples and cut into small dice. Carefully layer creme fraiche, granny smith apples, then Smoked Trout pieces into martini glass repeating until reaching the top covering with a dollop of creme fraiche. Lightly zest lemon on top and season with fresh cracker pepper. Add small spoon of caviar if desired. Serve with small spoon and baguette crostini’s.
