Sheet Pan Shrimp with Caramelized Citrus, Carrots, Onions, and Broccolini

This will be your new go to one-pan weeknight dinner. Big flavors that are easy on your waistband make this a great way to keep those resolutions.

Ingredients
1 lb. shrimp, peeled and deveined
2 red onions, cut into quarters
Broccolini
Carrots
Mixed citrus (oranges, blood oranges, limes, grapefruit), thickly sliced, enough to cover the pan
Citrus Teriyaki Sauce (1/2 cup teriyaki sauce + 1 Tbsp yuzu essence*)
Salt & pepper, to taste

*Yuzu essence can be found in the Asian foods aisle.

Instructions
1. Preheat oven to 400°F. Cover a sprayed sheet pan with citrus and place the onions and carrots on top, spaced out. Brush with Citrus Teriyaki Sauce and add a bit of salt and pepper. Cook for about 10 minutes.

2. Remove from the oven and add the shrimp and broccolini, brush with Citrus Teriyaki Sauce and a bit of salt and pepper. Place back in the oven and cook for an additional 10 minutes or until the shrimp is cooked through.


3. Remove from the oven and enjoy.
