2 lbs. sweet potatoes, peeled & cut into ¾-inch pieces
3 Tbsps Central Market Extra Virgin Olive Oil
¾ tsp salt
¼ tsp cayenne
½ tsp finely grated fresh lime zest
1 Tbsp Central Market Freshly Squeezed Lime Juice
¼ cup chopped fresh cilantro
1. Place an oven rack in the lower third of the oven and preheat to 425˚F.
2. Toss the sweet potatoes with 2 Tbsps oil, cayenne, and ¼ tsp salt in a shallow baking pan. Arrange the potatoes in one layer and roast, stirring half way through roasting, until tender, about 25 minutes.
3. Stir together the zest and remaining ½ tsp of salt in a small bowl.
4. Whisk together the lime juice and the remaining tablespoon oil in a medium bowl and add the roasted potatoes. Sprinkle with the mixture and cilantro, stirring gently to combine.
5. Serve warm.
