Now here’s something I bet you haven’t tried before: Pumpkin Spice Coffee “Creamer”* made with real pumpkin and almond milk. This recipe makes about 2 cups and you can put as much or as little into your coffee as you wish.
· 15 oz. Pumpkin Purée (1 can of pumpkin or roast and food-process a pie pumpkin)
· 1 cup Almond Milk
· ¾ cup Coconut Sugar
· 1 Tbsp. Maple Syrup
· 1 tsp. Pumpkin Spice
1. Whisk everything together (minus almond milk), till evenly combined.
2. Transfer to a small pot and heat over medium for about 5-8 minutes, whisking frequently to avoid burning.
3. Pour your pumpkin mixture into a high-speed blender and slowly add your almond milk while blending. Increase the speed and blend until smooth.
4. Feel free to add more or less almond milk, depending on your pumpkin intensity preference.
5. Let sit to cool if adding to cold coffee.
6. Pour over coffee of your choice, enjoy!
Will keep in an air-tight container refrigerated for up to 1 week, so this can be one of your make-ahead items before Thanksgiving day.
