For nearly 70 years the Schiltz family, of South Dakota, has been in the goose business, creating a goose that has rich, dark meat, including the breast, and is more full bodied than turkey. The family has also perfected their smoking technique over the years, to allow the birds to take on just the right amount of hickory smoke.
