Italian Grilled Chicken

Ingredients

  • 6 boneless, skinless chicken breasts
  • Fresh Ground Black Pepper to taste
  • 1/4 cup fresh basil leaves chopped
  • 1/4 cup olive oil
  • 1/4 cup butter melted
  • 3 cloves garlic peeled and crushed
  • 1 tbsp Parmesan cheese
  • 2-3 sprigs fresh rosemary

Instructions

  1. Rub the chicken breasts with pepper to taste.
  2. Blend the basil, olive oil, butter, garlic and Parmesan cheese at Low speed in a blender or food processor until smooth.
  3. Baste chicken lightly with the mixture and grill over medium coals. Continue to baste during the cooking time with the sauce.
  4. While the chicken is cooking, add a sprig of rosemary to the coals for added smoke flavor. Do this 2 to 3 times.
  5. Grill for 8 to 10 minutes per side depending on the temperature of the coals.
