Chicken Tamale Casserole

Ingredients

  • 12 Central Market chicken tamales
  • 1 cup poblano pesto from Central Market Bulk Bar
  • 1 cup heavy whipping cream
  • 1/2 cup pico de gallo from Central Market Bulk Bar
  • 1 cup Monterey Jack cheese shredded
  • 1/2 cup cheddar cheese shredded
  • 1/4 cup cilantro chopped

Instructions

  1. Remove corn husks from tamales and place tamales in a single layer in a 9 x 13 baking pan.
  2. Mix pesto and cream together and pour over tamales. Cover with foil and bake at 350 degrees for 30 - 45 minutes.
  3. Remove from the oven, pour on pico de gallo, sprinkle with cheeses and cilantro and return to the oven.
  4. Bake, uncovered, for 5 - 7 minutes more or until the cheese is melted and bubbly.
